


Staying true to the healthful virtues of wild plants, we use only the most healthful ingredients and techniques to produce our preserved foods. We use organic vegetables from our friends Padraig and Una at Beechlawn in Ballinasloe to make our sauerkrauts; we use honey from Tobias and his bees at Noinin Herb Farm in Tuamgraney in our Elderberry vinegar and Rose Jam; we use raw organic apple cider vinegar from Highbank Orchards in Kilkenny for our infused vinegars and pickles. Everything else is lovingly harvested by our hands.
We take pride in our small batches of sauerkrauts, pickles and vinegar infusions and we use only ceramic or stainless steel crocks in the production to ensure no harmful plastic chemicals leach into the foods. The same can be said for our drying process. We air dry all of our dried foods quickly and at low temperatures, on stainless steel racks to give us the best possible result.
